Madera log: 70% smoked dark chocolate mousse (infused with Chinese Lapsang Souchong tea), banana cream, Sacher chocolate cookie, dark chocolate feuilletine, miso caramel and soft banana cookie. Finished with dark chocolate and edible gold powder.
Kamelia log: gluten free. Chestnut and rum mousse, gluten-free cookie roulade topped with clementine marmalade, chestnut cream and gluten-free honey cookie. Finished with Alunga 40% milk chocolate flocking.
Mosaic log: vegan. Oat and coconut base, coconut and cashew cream, apple and passion fruit cookie, mango and passion fruit jelly in a mosaic pattern. Topped with Valrhona Inspiration vegan passion fruit chocolate and fried rice paper.
