Ingredients

  • 12 boneless, skinless chicken thighs
  • 1 large bell pepper
  • 1 large white onion

Marinade

  • 1 tbsp. dried oregano
  • ½ tsp. onion powder
  • ½ tsp. garlic salt
  • ½ tsp. salt
  • 1/8 tsp. cayenne pepper (to taste)
  • 1 tsp. paprika
  • 1 tsp. mustard powder
  • 1 tsp. sugar
  • 1/8 cup lemon juice
  • 2 cloves garlic, chopped
  • 1 tbsp white wine vinegar
  • ⅓ cup olive oil

Instructions

  1. Dice the onion and bell pepper (about 1 ½ inches wide)
  2. In an airtight bag or container, combine all the ingredients of the marinade. Mix well.
  3. Add vegetables and chicken cubes.
  4. Marinate for a minimum of 30 minutes.
  5. Preheat barbecue to medium heat. Lightly oil grill.
  6. Drain and discard marinade.
  7. Thread chicken cubes, peppers and onions alternately onto skewers.
  8. Grill the brochettes for about 8 to 10 minutes on each side, turning once. The brochettes are ready when they are well grilled and the chicken has lost its pink color.
