Ingredients

  • 1 chopped onion
  • 2 stalks of celery, diced
  • 2 carrots, diced
  • 8 cups of chicken broth
  • 2 cups of cooked chicken, roughly cubed
  • 1 cup of short pasta or egg noodles
  • 1 cup of finely sliced green cabbage
  • 2 cups of spinach

Herbs

  • ½ tsp dried thyme
  • ½ tsp dried oregano
  • ¼ tsp fresh rosemary, chopped
  • Salt and pepper to taste

Garnish

  • 1 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, sauté the onion in a bit of olive oil for a few minutes.
  2. Add the celery, carrots, and cabbage, and cook for 5 minutes.
  3. Add the chicken broth and herbs.
  4. Bring to a boil, reduce the heat, and let it simmer for 15 minutes.
  5. Add the chicken, pasta*, and spinach.
  6. Bring back to a boil and cook for 6 minutes or until the pasta is al dente.
  7. Add the chopped parsley and adjust seasoning if needed.

Notes

*Tip: For even better leftovers, cook the pasta separately and add it when serving. This way, you'll prevent it from becoming overcooked when you reheat the soup.
