As an alternative to the classic mignonette with red wine vinegar and shallots, you must try this version with rice vinegar, lime, ginger and spicy sauce.

For the ginger, I recommend grating it with a microplane to get the finest pieces possible.

Lime and ginger mignonette sauce
A tangy and spicy mignonette that will add a little kick to your oysters
Ingredients
- Juice of 1 lime (about 2 Tbsp.)
- 1 tbsp. chopped fresh chives
- 3 tbsp. rice vinegar
- ½ tsp. grated ginger
- A few drops of sriracha
Instructions
- Combine all ingredients in a bowl and stir to mix.
- Serve with oysters.
